My list of homemade food
gifts is more or less like the story of the fuitcake: the same one appears
every year and it just stays there, untouched. Or the new year´s resolutions list. Which I
don´t make anymore; haven´t for years.
We are having a homemade
gift giving party around our Sunday Supper table today, hosted by the wonderful
Susan. Are you ready for the amazing gifts from our kitchens we have made for
today?
Homemade gifts, especially
if you love to bake like me, sound like an obvious choice, not to mention the fact
that many of your friends are expecting you show up with bags and boxes of
whatever you decided to make, things that will never be made in their own
kitchens, that is unless they invite you and demand you bake for them.
But, there´s always a but regarding
holiday gifts, there were two years, yes yes, not one but two, when I did
actually made this kind of gifts, bought jars and boxes, and spent a few days
baking and writing cute notes, tying ribbons, wrapping cookies. It is rewarding
like no other gift. So why don´t I do it more often? If I knew the answer to
that my life would be noticeably better. I think. But let´s not think too much
about it and feel frustrated.
Anyway, this was one sauce
I made that first time I ever gave homemade gifts. It was a big hit. And after
making it a few times I understood why. First, it´s different. Second, it´s
incredibly versatile. Third, it can be made year round, with fresh or canned
fruit. Fourth, it tastes wonderful. Fifth, it comes together in no time with
minimal work. And I can go on.
Most sauces are chocolate
or caramel, which are obviously a no-brainer to give. So this sauce is a great
alternative, with it´s gorgeous color and interesting flavor.
It can be poured over ice
cream, slathered on toast, swirled into a cheesecake before baking, used with chicken or pork to add sweetness to
a dish, used in any crumb bar recipe instead of the traditional jam like these
shortbread squares. And I´m sure you´ll find
many other uses for it.
And thanks to this post, someone is going to get an early holiday gift, which obviously is this apricot pineapple rum sauce. But prettily embellished with a ribbon.

APRICOT PINEAPPLE SAUCE
barely adapted from The Joy of Cooking, by Irma and Marion Rombauer

1 ½ cups apricots
1 cup water
3 cups chopped pineapple
1 ¼ cups sugar
5 Tbs rum
Cook apricots and water in a saucepan over low heat
until fruit is very tender, about 20 minutes. Transfer to a food processor (or
use an immersion blender directly in the saucepan) and add pineapple. Process a
few times until mixture is a bit chunky.
Return to saucepan, add sugar and rum and cook over
low heat until it thickens a bit.
Transfer to sterilized jars. Keep refrigerated.

Sounds wonderful. Have you ever canned it? We are trying to make a few gifts early this year and this one would be amazing. Although, I am afraid if I made it early I would end up testing it too often and have none left to give.

ReplyDeleteI really like the versatility of this sauce. I would totally put it in some chicken and for a savory but sweet dish. Yummy! I use to bring food to the office all the time when I started cooking but I stopped because they started expecting it and I never got one thank you. Kind of disapointing.
