This is one of the best tarts involving chocolate and nuts I ever made. And it´s not my opinion only. There are many friends that are forever asking me to make them `the one with a crunch and chocolate´ again, not interested in the details like the hazelnuts or the kind of chocolate. I don´t think they even know it involves them. But I do, and I know many will find this combination different and the flavor superior.
#BakeForACure encourages us to bake something and take it to a medical cancer treatment professional or someone who has been affected by cancer.
So I´m dedicating this post to my mom who is a breast cancer survivor and today is Mother´s Day here, and to my wonderful brother who lost the battle six years ago, but who is also a survivor, having had cancer 25 years before that. Yes, he had it twice in his life.
The recipe
is exactly the one that appears in Francois Payard´s book. There´s no need to
alter something that is so incredibly well thought out. All I can do is hope
you get the message. You´ll wonder why you never came across anything like this
before.
HAZELNUT MILK CHOCOLATE TART
from Simply Sensational Desserts, by Francois Payard
½ recipe
Pate Sablée, completely baked
1 ½ cups
(215g) whole hazelnuts, toasted and skinned
1 Tbs honey
1/3 cup
(67g) sugar
1 Tbs corn
syrup
Pinch of
salt
1/3 cup
cream
5oz. (145g)
milk chocolate, melted and warm
In a large
bowl mix hazelnuts, chopped chocolate and honey,
In a medium
saucepan combine sugar, corn syrup and salt. Stir over medium heat until sugar
dissolves. Without stirring, boil until sugar is a deep amber color, about 5
minutes. Watch it closely. Have ready the cream.
Remove from
heat and add the cream; it bubbles up furiously. Stir with a wooden spoon and
return to low heat to melt any hard pieces of caramel.
Pour
caramel mixture onto hazelnuts, let rest a few minutes so it melts the
chocolate and then stir until smooth. Pour onto the baked pie shell, spreading
evenly. Let cool completely. (At this point it can be covered and refrigerated
for 2 days).
When you´re
ready to assemble the tart, put cream in a large bowl. Beat until medium stiff
peaks just begin to form. Add warm chocolate and gently mix until well combined.
Spread with
a spatula or piping bad over the cooled hazelnut mixture.
Keep
refrigerated.

I'm sorry to hear about your brother but thankfully, your mother is still here with you. As for this pie - this is my dream dessert. It's like a Ferrero Rocher in pie form, with the added delicious element of caramel. I want to lick my screen, that's how tantalizing your pie looks.
